Rory can fly pretty much as well as anyone with eight weeks of training and a couple of Skywalkers giving her one-on-one lessons could. :D So, she could probably land a jet if REALLY hard-pressed, but would be much, much more comfortable trying her luck with, say, a Jedi Starfighter.
